Teriyaki Chicken Kabobs

Ingredients:



  • 1 can (20 ounces) pineapple chunks in juice
  • 1 package Simply Asia® Sesame Teriyaki Marinade Seasoning Mix
  • 2 tablespoons oil
  • 1 tablespoon white or rice vinegar
  • 1 pound boneless skinless chicken breast halves, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces

Cooking Instructions:



DRAIN pineapple, reserving 1/4 cup juice. Mix Marinade Mix, reserved juice, oil and vinegar in small bowl. Reserve 2 tablespoons of the marinade for brushing. Place chicken in large resealable plastic bag or baking dish. Add remaining marinade; turn to coat well.

REFRIGERATE 15 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade. Alternately thread chicken, pineapple and bell pepper onto skewers.

GRILL kabobs over medium heat 6 to 8 minutes or until chicken is cooked through, turning occasionally. Brush with reserved marinade halfway through cooking.



Test Kitchen Tip: If using wooden skewers, soak thoroughly in water for at least 30 minutes before threading with chicken, pineapple and bell pepper. This prevents them from burning when on the grill.
